Dahi Aloo (Yogurt Potato Curry)

Instructions

Boil the potatoes until they are tender but still firm. Peel them and cut them into medium-sized cubes. Set aside.

Heat oil or ghee in a heavy-bottomed pan or kadai over medium heat.

Add cumin seeds and asafoetida. Let them splutter for a few seconds.

Add ginger-garlic paste and slit green chilies. Saut for about a minute until the raw smell disappears and they are fragrant.

Reduce the heat to low. Add turmeric powder, coriander powder, and red chili powder. Saut for 30 seconds, stirring continuously to prevent burning. If the spices start to stick, add a tablespoon of water.

Turn off the heat or remove the pan from the stove. This is a crucial step to prevent the yogurt from curdling.

Gradually add the smoothly whisked yogurt to the pan, stirring continuously and vigorously to ensure it mixes well with the spices.

Return the pan to low heat and continue stirring constantly for 3-5 minutes until the yogurt comes to a gentle simmer and starts to thicken slightly. Do not stop stirring until it begins to boil, or it may curdle.

Add the cubed potatoes and salt to taste. Mix gently to coat the potatoes with the yogurt gravy.

Add 1/2 to 1 cup of water to adjust the gravy consistency as desired. Bring it to a simmer.

Cover the pan and let it cook for 5-7 minutes on low heat, allowing the flavors to meld and the potatoes to absorb the gravy.

Stir in the garam masala and crushed kasuri methi. Mix well.

Cook for another 2 minutes. Check and adjust salt if necessary.

Garnish with fresh chopped coriander leaves before serving hot.

To prevent the yogurt from curdling, ensure it is at room temperature and whisked thoroughly until smooth. Always add yogurt to the pan off the heat or on very low heat, and stir continuously until the gravy comes to a gentle boil. Adding a tablespoon of gram flour (besan) to the yogurt before whisking can also help stabilize it.
